Quick Chicken Fricassee

Ingredients
  • 2lbs. boneless, skinless chicken breasts, thighs, or a combination
  • Table salt and ground black pepper
  • 1T. unsalted butter
  • 1T. olive oil
  • 1lb. cremini mushrooms, stems trimmed, caps wiped clean and cut into 1/4-inch slices
  • 1medium onion, chopped fine (about 1 cup)
  • 1/4 dry white wine
  • 1T. unbleached all-purpose flour
  • 1medium garlic clove, minced or pressed through garlic press (about 1 teaspoon)
  • 1 1/2c. low-sodium chicken broth
  • 1/3c. sour cream
  • 1 egg yolk
  • 1/2t. freshly grated nutmeg
  • 2t. juice from 1 lemon
  • 2t. minced fresh tarragon (see note)
