As promised by its title, The Colorful Kitchen cookbook’s author, Ilene Godofsky Moreno, assembled a large collection of vegan recipes, selected and created partly for their colorful presentations. With this vegan cookbook you can satisfy any vegan kitchen’s need, from smoothies through main entrées to desserts. The recipes are very good, many are original and well written, and the instructions are easy to follow. Ingredients are readily available, but a health food store within your reach is essential. Photo illustrations are beautiful. Each recipe gives you your total time and active prep time. Active times for simple recipes are reasonable, but for anything else they are misleading. Moreno did not include chopping, slicing, mincing, and so on, and many recipes call for one or two additional preparations given in the last chapter. For example, for the simple breakfast scramble sandwich (five minutes), you need to prepare a tofu scramble and tempeh bacon (recipes in the last chapter) before you can even start. The recipe layout is very good (with a few exceptions), and the additional notes and headnotes are also useful. The last chapter provides recipes for vegan staples and sauces. The index is good and cross-referenced. This is a useful vegan cookbook.
