Here is a very good vegan cookbook by vegan super-athlete Matt Frazier and journalist/recipe developer Stepfanie Romine: The No Meat Athlete Cookbook. It’s aimed at athletes who prefer no meat in their diets yet want to keep their competitive edge at the highest level. The authors write extensively in the introduction about a plant-based diet and a plant-based kitchen to prepare the non-vegan reader for the change from a traditional kitchen. The recipes are very good and quite varied. Each one is labeled by several icons (fast food, slow food, slow cooker, carbo loading, gluten free, and oil free). Prep and cooking times are given, though prep times are much underestimated for the average home cook. Read the recipe carefully, as many require preparations given elsewhere in the book; thus prep-time may be doubled or tripled. The recipes are well written but not for the beginner cooks—you need at least an intermediate kitchen and cooking skill. Each chapter is introduced by a nice text, and the head notes are worth reading. You’ll find many good sidebars. You don’t need to be a vegan athlete to use this cookbook. The index, unfortunately, is not user-friendly and not cross-referenced.
